Florence may show up under the Utility Category. Also, double-check /usr/share/applications/florence.desktop to make certain that the argument NoDisplay=true doesn't exist. If it does, delete or change to =false.
An alternative to florence is xvkbd: available via Puppy Package Manager. IIRC, it requires xdotool similarly available.
